Spring has most definitely sprung! Saturday, Thomas and I headed up to Carlsbad to visit the flower fields. The sun was shining and no clouds were in sight although that made it feel a bit more like summer than spring. But one look at the field of vibrant blooms and it was apparent that it most certainly is spring. The rows and rows of varying flowers are so mesmerizing, we spent nearly two hours wandering the fields. Had the park stayed open past six, I am sure we would have stayed longer!

Happy Friday! I am so excited for the weekend! I originally intended for this post to go up this morning but realized I had a dentist appointment so sorry for the late day post! I had to get a cavity filled which was so not fun. So I am extra excited for the weekend! :) Thomas and I are going to the flower fields in Carlsbad this weekend!

Happy Taco Tuesday! I’m so excited to be sharing my recipe for potato tacos with mango and salsa verde today! The idea for these came to me after reminiscing on the potato tacos I loved so much growing up at my family’s favorite Mexican restaurant in South Redondo Beach. Thinking about them again had me eager to create my own healthier version of them!

Thomas and I enjoyed a beautiful Saturday strolling through Old Town San Diego experiencing the culture and vibrant atmosphere. I had been to Old Town a couple of years ago to dine out friends but I had never really been through the historic part of the area so it was so fun to see a new side of it. I couldn’t believe I had been missing out for so long! The architecture is so gorgeous and I really just love old buildings that have so much history and character! I also admired some of the gorgeous pottery that I have pictured above. The colors and shapes of them are so unique and vibrant. I also really enjoyed seeing the hand painted tiles that are featured on some of the staircases. It’s the little details that really give Old Town its beauty.

Fiesta Style Breakfast Potatoes (Inspired by Cafe Gratitude)

Fiesta Style Breakfast Potatoes (Inspired by Cafe Gratitude) by Vegan À La Mode

Over Valentine’s Day weekend, Thomas and I rented a house in Venice through Airbnb. One of the reasons we selected Venice is it’s proximity to the beach and most importantly, Venice is home to Cafe Gratitude. If you follow me on Instagram, I’m sure you know what a huge fan I am of Cafe Gratitude. I eat there just about every time I’m in LA! We were lucky enough that the house we rented was so close to Cafe Gratitude that we walked there each day for breakfast. Thomas and I both LOVE potatoes so when we saw their “I Am Grounded” breakfast potatoes on the breakfast menu, we knew we had to order them. The dish was composed of roasted fingerling potatoes drizzled with cashew cream and topped with fresh pico de gallo and pineapple when ordered “fiesta style”. It was so delicious that we ordered them twice in a row! Upon returning to San Diego, I knew I would have to recreate them myself.

Mission San Diego de Alcalá

Mission San Diego by Vegan À La Mode

The weather in San Diego this weekend was so gorgeous. I was so excited to finally be able to wear this dress I just got from Ruche. I love it because the floral print almost looks like a Van Gogh painting. I normally don’t wear any yellow but I actually found myself really loving the yellow contrast piping on the bodice of the dress. Ruche is my favorite online boutique because they have endless options for dresses that are unique and beautiful. Plus, I just love dresses!!
