My week has been filled with soothing smoothies, juices, and soups! I had my wisdom teeth taken out on Saturday so I’ve been sticking with a liquid/soft food diet so it heals up quickly! While at first it seemed totally challenging to be so confined to that type of food, it’s actually forced me to get creative in the kitchen and branch out. Normally, I wouldn’t make a soup in the spring because it’s pretty warm here in San Diego this time of year. But I know it most other states, it’s still pretty chilly out so it feels nice to share a recipe that will warm up those of you in colder regions!

Last Saturday, Thomas and I spent the early evening at Balboa Park. It’s a great place to visit, no matter how many times you’ve been before. Balboa Park is expansive so there’s plenty to see and also many museums to check out. What I really love though, is the old architecture in the park, it’s truly beautiful. It’s also a gorgeous place to have a picnic, I can’t until it’s warmer and less breezy out to do that! We had intended to visit the Japanese Tea Garden but that closed early so went down to the rose garden instead. It was a great time to go because all the flowers were in bloom!

Earth Day

Every day is Earth DayHappy Earth Day! In honor of this important day, I wanted to share my thoughts on the impact our wardrobe choices has on the planet. What first drove me to start this blog was my love of fashion. I wanted to keep my passion while still being environmentally friendly. But I’ll be the first to admit that I wasn’t always this way. In my teens, I was very materialistic and ignorant of the impact my shopping addiction had on the planet. I was obsessed with Gossip Girl (so much so that I even had a blog devoted to the fashion of the show) and dreamed of having wardrobes as fabulous as that of Blair Waldorf. I wanted to be a stylist and hoped to dress characters in all the glamorous clothing I couldn’t afford on a TV show someday. I saved up the money I earned on that blog to buy designer jeans and handbags. I stayed this way until age 20 when I went vegan. I look back at this time as a fun start to my blogging journey but I am so glad I have since realized that designer brands aren’t everything.

Sunrise Over The Bay

Sunday morning, Thomas and I arose at 5 AM to head to the bay to watch the sun rise. Watching the sunrise together was something I had been wanting to do for awhile. Ever since our early winter drives to Big Bear when I saw how gorgeous it was to watch the sky light up at dawn, I had been wanting to truly watch it and enjoy it. My friend Marin gave the suggestion of going to the bay to get a good view of the sun rising on the east. While it was a bit cloudier than anticipated, the view was still worth the early wake-up time.

When looking for something comfy yet cute to wear, I always find myself reaching for a tank by The Tree Kisser. I love the uplifting messages on them that always seem to spark conversations. The Tree Kisser is made by Jessica Schlueter who is a devoted animal activist that I really admire! She chooses a different cause every month to donate 10% of profits to. It is so great that so many shelters and sanctuaries are being helped out through her designs!

Veggie Stuffed Gold Potatoes with Tofu Sauce by Vegan À La Mode (Vegan, Gluten-Free and Nut-Free)

I can’t believe I haven’t posted this recipe yet! I came up with this one over a year ago and it’s remained a favorite meal of mine and Thomas’s. It’s inspired by one of my favorite restaurants back home in Redondo Beach called The Green Temple. The Green Temple is an earthy vegetarian restaurant with nourishing food and many vegan options. My favorite thing there is The Savory Gold which is a Yukon gold potato stuffed with veggies and topped with organic tofu sauce. Since Thomas and I are potato lovers, I knew I needed to recreate my own! Every time I make this we devour it before I even get a chance to get photos of it. So this time I devoted an afternoon to photographing this so I could post the recipe!

While most of the time I try to post recipes that are decadent looking or drizzled with fancy sauces, I also really appreciate a simple meal that can be prepared on a weeknight. I was hesitant to share this one at first for fear it was too boring. But then I thought to myself, how many times have I not made a recipe I’ve seen online because it’s too extravagant? I usually reserve recipes like that for weekend dinners when I have more time in the kitchen. On an average weeknight, I’m usually eating something more along the lines of this. Something simple and easy that can be prepared under an hour.
