While most of the time I try to post recipes that are decadent looking or drizzled with fancy sauces, I also really appreciate a simple meal that can be prepared on a weeknight. I was hesitant to share this one at first for fear it was too boring. But then I thought to myself, how many times have I not made a recipe I’ve seen online because it’s too extravagant? I usually reserve recipes like that for weekend dinners when I have more time in the kitchen. On an average weeknight, I’m usually eating something more along the lines of this. Something simple and easy that can be prepared under an hour.
These tostadas are perfect to make after a busy day because they only take 20 minutes to make! The hardest part is waiting for the oven to preheat, at least it is for me. I’m always sticking things in the oven before it’s ready because I’m too impatient! Anyone else have this problem? But as soon as the tortillas, are toasted you’re more than halfway done! The great thing about tostadas is that you can dress them up with whatever toppings you see fit or have on hand. Sometimes, I’ll add a drizzle of salsa verde or cashew cream if I have it on hand. But they are also just as delicious when served with a topping of vegan cheese, olives, and avocado! If you aren’t a fan of vegan cheeses, you can skip it which is what Thomas does, or substitute it with cashew cream! Either way, you are bound to enjoy these!
Easy Bean Tostadas (Vegan and Gluten-Free)
1 package of organic corn tortillas
1 can organic vegan refried beans (I use 365 Fat-Free Refried Beans)
1 can black olives
1 package Follow Your Heart Vegan Cheddar Shreds
1 avocado, cubed
Optional toppings: cilantro, shredded lettuce, green chiles, pico de gallo, salsa verde, or cashew cream
1. Preheat the oven to 450 degrees. Line a baking sheet with a baking mat or parchment paper. Place 4 tortillas on the tray, if serving 4 or more, double the amount. Once the oven is preheated, bake the tortillas for 5 minutes on each side or until crispy.
2. Place a scoop of refried beans on each toasted tortilla and spread evenly. Next sprinkle on vegan cheese and olives. Put back in the oven for an additional 5 minutes.
3. Remove tostadas from the oven and add the avocado and any other additional toppings such as cilantro. Serve immediately and enjoy!
