My Favorite Recipes of May

While I love creating new recipes from scratch, it’s not exactly something I do too often. What I really love is the actual act of cooking and then photographing the finished result. Recipe development is tough so I usually only come up with a couple of new recipes a month. So when I’m not creating my own recipes, I turn to my favorite cookbooks and blogs to make delicious dinners for Thomas and myself. So I decided I’ll be sharing some of my favorites on the blog more often. I hope it helps to inspire some of you who also are looking for new meal ideas. I try to avoid labor intensive recipes on the weeknights so many of these are a cinch to whip up! As you will learn after reading this post, I turn to Chloe Coscarelli’s recipes a lot! That’s because they never let me down and can be easily made gluten-free! I also really love The Plant Strong Vegan’s recipes lately so you’ll see one of hers included as well.

p.s. All of these recipes are boyfriend approved! That’s always crucial before declaring a recipe is a fave!

Bankers Hill

Bankers Hill

A recent place I’ve been enjoying exploring is Bankers Hill. I hadn’t ever been to that area of San Diego but was looking up hidden spots in the city and found that there are a few bridges in the area that have cool views. We headed over to see for ourselves and found that Bankers Hill is a really cute neighborhood tucked away on the outskirts of downtown! This bridge was a little scary to walk over, just because the valley below it is so deep and the bridge is made of wood planks. It was a fun spot to take photos!

Peanut butter smoothies are one of my favorite things. I love to switch up the flavors of my peanut butter smoothies by adding strawberries or in this case cacao. This one is one of my favorites because there’s no better combo than peanut butter and chocolate. The peanut butter adds protein while the cacao is energizing. It feels like such a treat too because it’s a sweet breakfast but contains no added sweeteners!

On Saturday evening, Thomas and I ventured out to the silver strand in Coronado. I had seen some gorgeous photos of the solar clock that’s there and really wanted to check it out. When we got there, the weather was a stark contrast to the sunshine by our apartment. It was gloomy and very chilly which was a bit of a let down. But it was still cool to see! On June 21st the solar clock aligns and tells time accurately. I think that would be fun to see if there’s clear skies!

Seaport Village by Vegan À La Mode

San Diego has so many places from which to admire its beauty. One of my favorites is Seaport Village. It’s a gorgeous spot downtown with lots of shops that overlooks the harbor. It’s a hotspot for tourists to dine and shop at but I still love it. My favorite thing to do there is just to walk around and look at the gorgeous water and boats in the harbor. It’s such a great place just to explore. You don’t have to buy anything or eat anywhere there to admire the place! You can see the Coronado Bridge from Seaport Village and if you go at night, you’ll notice how pretty it is when it’s all lit up! It’s such a fun place for a date night which is why Thomas and I went!

Dairy-Free Mint Chocolate Chip Milkshake by Vegan À La Mode (Vegan and Gluten-Free)Milkshakes, smoothies, juices and soups are pretty much the 4 core foods of wisdom teeth extraction recovery. It’s actually pretty easy to survive off of as a vegan since there is such an abundance of dairy free options these days. My favorite treat out of the bunch has been mint milkshakes! It’s so refreshing and soothing, I went through 2 pints of this ice cream in the past 2 weeks!
