The Ultimate Peanut Butter Smoothie Bowl by Vegan À La Mode (Vegan and Gluten-Free)

This creamy and delicious peanut butter smoothie bowl is the perfect treat! It can serve as breakfast, dessert, or both! Crunchy chocolate chips and dreamy peanut butter swirls will send you over the moon.

During summer, I keep the freezer stocked with frozen bananas so I can whip up plenty of frozen creations. Smoothies are an obvious summer breakfast choice, but smoothie bowls are a once in a while treat for me. I don’t always have time to create smoothie bowls but when I do, I go all out!

The base of this is a banana peanut butter smoothie and then the toppings are extra peanut butter, mini chocolate chips, and banana slices. I love it because it’s a little dessert-ish but totally appropriate for breakfast! You could have this as a healthy dessert though also! It really works for both which is why I deem this the ultimate smoothie bowl! 😉

The Ultimate Peanut Butter Smoothie Bowl (Vegan and Gluten-Free)

Ingredients
2 cups frozen bananas
2 dates, pitted
1 cup unsweetened vanilla almond milk
3 tablespoons organic unsweetened peanut butter
1 teaspoon lucuma
1 banana, sliced
2 tablespoons dairy-free mini chocolate chips
1 tablespoon peanut butter
1 teaspoon coconut oil

Directions
1. Add frozen bananas, almond milk, dates, 3 tablespoons peanut butter and lucuma to the blend. Blend on high until smooth.

2. Pour the smoothie into two bowls, dividing equally. Set aside.

3. In a small bowl, put in remaining peanut butter and coconut oil to make a peanut butter shell. Microwave for 30 seconds and mix with a spoon until smooth and thinned out.

4. Drizzle each smoothie bowl with the peanut butter shell, banana slices, and chocolate chips. Serve with a spoon and enjoy your tasty treat!

      Thanks Michelle! Yes, Lucuma isn’t too common but it’s a superfood that I love! It adds sweetness naturally to this recipe but could be omitted. If you omit it, I would suggest adding another pitted date!

    Love love love! I also love freezing up ripe bananas and turning them into decadent bowls of vegan ice cream in the summer too – its the best treat! Lucuma is just the best, so I bet it makes these extra sweet.

      Thank you Kate! Lucuma is so great! I know not many people know what it is but it’s such a necessity for smoothies! Just a tiny pinch makes such a flavor difference :)
