Vegan and Gluten Free Restaurants in Portland Oregon

While in the Pacific Northwest, we were lucky enough to visit a wide variety of vegan and gluten-free restaurants in Portland. I set out to try the very best ones and I discovered some real winners along the way! Since I’m gluten intolerant, all of the restaurants in Portland we dined at had gluten-free options. I really had some spectacular meals and am happy to be sharing them today!

Gluten-Free Baked Ziti

Vegan Gluten-Free Baked Ziti

I love Italian food and am always trying out new pasta and pizza creations. The other night, I randomly came up with this baked ziti that turned out to be a hit! I knew I had to share this recipe because it’s a total crowd-pleaser!

I had recently made a homemade marinara that was delicious. I had quite a bit of leftover sauce and wanted to repurpose it. I had tofu, basil and plenty of brown rice penne pasta on hand so I decided to make up a new baked ziti recipe! I already have made vegan baked ziti in the past but the recipe I usually use is quite heavy. Both the base sauce and the ricotta are nut-based so it tastes delicious but is really decadent. I wanted this to be light enough for a weeknight dinner but tasty enough to make for guests.

Cherry Dress by Vegan À La Mode

On our last night in Portland, Thomas and I were eager to have a fancy night out. All of the restaurants we had been to were casual so we were really hoping to eat somewhere a little nicer and we lucked out by finding Departure downtown. While we were heading back to our AirBnB to get ready for dinner, I noticed a cute boutique while I was stopped at a traffic light. The first thing I spotted was a cherry print dress. Thomas caught me staring at it and said, “You want that cherry dress don’t you?” I told him yes and he said we should go so I pulled into the lot and lucky enough, the dress was even cuter up close! I love how it has a retro silhouette and figure flattering a-line cut. I had to resist buying the other patterns and just chose the cherry print one. But now that I’ve discovered this dress is also available online in other prints, I’m really tempted!

I apologize for the hiatus, I spent the past week in Portland! The trip was something Thomas and I had planned quite some time ago so to say I was eager to go would be an understatement! We had the best time and I am so looking forward to sharing with you all the places we visited, food we ate, and my Portland outfits! We took over 2500 photos so since getting back, I’ve had a lot of photos to sort through! Gluten-Free BBQ Pineapple Pizza by Vegan À La Mode (Vegan and Gluten-Free)I can’t tell you how many gluten-free pizza crust recipes I’ve tried. I’ve lived a gluten-free lifestyle for over a year now and until now, I was never fully satisfied with any pizza crust recipes I tried. I actually had sort of given up and started just relying on Venice Bakery’s gluten-free pizza crusts that I had found at Whole Foods. They’re small and only serve about one and they’re a little pricey, but it was so much easier than trying out extravagant crust recipes. So I started just picking up one of those crusts every time I wanted to make pizza until they disappeared from my local Whole Foods. I finally asked a cashier on our last visit what happened to them and I was informed that they had reordered them, but the delivery was delayed and that they should be restocked within a week. Well, I really wanted to make BBQ pizzas this week and didn’t want to wait a week! So last night, I just decided to try a new crust recipe I had pinned on Pinterest recently.
