On Wednesday evening, my close girlfriends and I got together for a fun and feminine photoshoot in the park. The lighting was perfect at golden hour and we had the best time! We brought along some healthy picnic snacks (along with some indulgent treats) as well so we could feast afterwards!

There’s nothing that says summer more than picnics filled with watermelon, pasta salad, and a sweet treat! We chose to go to Golden Hills Park for our golden hour picnic and it was the perfect location. I whipped up some vegan snacks and entrees for us to eat! Our spread included Chloe Coscarelli’s avocado caprese pasta salad along with Oh She Glows gluten-free brownies and an Asian-inspired quinoa salad. It was all light and healthy enough to enjoy late in the evening but still satisfying enough to call a meal!
It’s crazy to think it’s been two years since I’ve called these girls my roommates! We all dreamed of having a house together and made it our reality when our leases were all up at the same time ago a couple of summers ago. We got a cute little house which we lovingly named the Tipton Palace. Though it had its flaws (like a tiny kitchen), we had the best times living together. When I first went vegan, my roommates were all so supportive and would always try the recipes I was experimenting with. One of our house favorites was Chloe’s Kitchen avocado pasta! But I must say that I’m sure there were some not-so-tasty vegan mishaps in my early stages of learning to cook, but my kind roommates would have something nice to say about whatever I had made. One time when I was cooking dinner and dessert for Thomas’s birthday, I was running behind schedule and I was so overwhelmed because I was making multiple recipes. I burnt the caramel for the vegan salted caramel bars I was making Thomas and totally stressing out! But Laura came to the rescue and helped me make a new batch! I truly miss the fun times we shared in that house but I feel so lucky to still have these girls in my life. They are truly the sweetest friends!
I have to admit, one of the things I miss most about living together besides being able to see each other all the time is raiding each other’s closets! But for this occasion, Laura and Kelsey each borrowed a dress from me so it was fun to make it feel like old times. Besides loving any excuse to dress up and take photos together, we wanted to have a last hurrah since Laura and Kelsey are moving next week. I know though that I will still be able to always call them dear friends.
