Vegan Camping Trip in Julian, CA

This past weekend, Thomas and I took our first camping together in Julian, just outside of San Diego. It was the first time I’ve ever camped as a vegan and I couldn’t believe how easy it was to stay healthy and plant-based! I’m sharing all of my tips for vegan gluten-free camping today!

In the morning, we enjoyed these Modern Oats 5 Berry Oatmeal Cups which are vegan and gluten-free. It’s the easiest breakfast, all you have to do is add hot water! They are so delicious and are really energizing!

When lunchtime rolled around, I made us Lundberg’s Rosemary Rice Pilaf and mixed in some navy beans for protein. I loved this lunch because it was really healthy and easy to make! You could also add in some fresh chopped zucchini or cherry tomatoes to add a little more flavor!

For dinner, we used our leftover rice blend from lunch and made tacos with it! We added organic refried beans from Whole Foods, Organicville Salsa and avocado. It was really delicious and yet another easy camping meal!

Of course for dessert, we brought along all of the vegan s’mores supplies I Instagrammed earlier in the week! We used Dandies vegan marshmallows, Ginny Bakes and Enjoy Life gluten-free cookies, and Alter Eco chocolate to make our s’mores and it was delicious! Cookies are a great alternative for Graham crackers since it’s basically impossible to find ones that are vegan and gluten-free.

More meal ideas:

  • Bring along lots of snacks like organic tortilla chips, Larabars, granola bars, dried fruits and trail mixes for easy foods that can be eaten on the go
  • Stock up on healthy pre-packaged foods like rice mixes and beans since they can be easily cooked and don’t spoil
  • Overnight oats would also be a great breakfast but just make sure you can keep them cold in an ice chest and eat them on the first or second day
  • Don’t forget to pack fresh fruits like watermelon, tangerines, cantaloupe, and apples which will not only satisfy your appetite but also help your thirst!

Watch The Sunset

One of my favorite parts of each evening was watching the sunset. The colors were so vibrant and made the sky look gorgeous. If you’re on the east coast, wake up early and catch the sunrise which is certain to be equally beautiful!

Blue Moon August 1st 2015


We lucked out and were camping on July 31st which meant we got to see the “blue” moon. If you aren’t familiar, a blue moon isn’t actually blue but is just a rare occurrence where there are two full moons in the same month. But that did mean the stars were a little less visible but the second night we got to see the sky full of stars!

Eco-friendly frisbeePlay Games

Thomas and I love to play games whether it be cards, board games or something more active like frisbee. We found this eco-friendly frisbee on Amazon and spent the afternoon playing with it Saturday. Afterwards, we enjoyed a competitive match of Scrabble and Scattergories.

It’s amazing how many unexpected discoveries you make when you immerse yourself into nature. I had no clue there could be wild turkeys and cows in San Diego County but sure enough there were! Right across from our campsite this not-so-little turkey was hunting for food along with 5 or 6 other turkeys. I loved getting to see the animals wild and free as they should be :)

Seeing them out roaming freely made me think so much about the food system. All I could think was how wrong was it when I first spotted the cows out in the pasture that I had to hope they were free cows not being raised for slaughter. It’s their earth too! How is it fair that they can be “owned”? It seemed so rare to me to see cows roaming so much land but that’s the way it should be. It made me happy nonetheless to see some happy animals living a free life.

It felt so nice to getaway for the weekend and I’m already eager to go camping again! It’s such a fun and inexpensive way to fulfill your adventurous side. I highly recommend going camping even if you’re vegan and/or gluten-free! When you come prepared, it’s a total breeze.     Such gorgeous photos and awesome dining-while-camping tips, Karissa! Those tacos look delicious. Easy and practical yet also special and satisfying. I might have to give this whole camping thing a go :)
