Does it get any better than vegan pizza and a new episode of your favorite show? To Thomas and I, it doesn’t. We settled into our Wednesday night with our personal vegan pizzas and Big Brother and it made for the perfect evening. These pizzas were so delicious, I decided to do an impromptu post on it!
I’m not normally one to come up with spur of the moment recipes. Usually, I’m inspired by something specific, for example, a really delicious meal I just ate at a restaurant. But on this occasion, I was simply browsing the vegan cheeses at Whole Foods when an idea struck me. I had already been planning on making vegan pizzas this week but didn’t have an exact plan until I spotted Parmela Creamery’s kalamata olive cheese. I knew instantly I wanted to make a Greek-inspired pizza.
The price and ingredients were right so I popped it into my cart and headed down a few aisles to pick up olives and artichoke hearts. I also couldn’t resist getting mushrooms and fresh basil as well. While this pizza sounded spectacular to me, I knew it probably wouldn’t to Thomas since he is a man of simple tastes. But luckily, with personal pizzas there’s no issue switching up the toppings for whoever you are cooking for!
Of course, I made these on my trusty Venice Bakery gluten-free vegan pizza crusts. They are about 8 inches so they are perfect for personal pizzas. If you don’t have access to gluten-free vegan pizza crust in your local market, I recommend either making your own (I love this recipe) or you could even buy one from a chain with vegan/gluten-free crusts like Z Pizza or Blaze and get no toppings on it and take it home to dress up! If all else fails, plan ahead and order your pizza crusts online from somewhere like Venice Bakery who has an online store! Once you’ve got the crusts and toppings, you’re in for one delicious vegan pizza night!
Kalamata & Cashew Cheese Personal Pizzas
2 8 inch gluten-free pizza crusts
1 jar pizza sauce (I used Rao’s)
Kalamata olive nut-based cheese or vegan cheese of choice (Daiya, Kite Hill, homemade, etc.)
Toppings: Mushrooms, kalamata olives, black olives, artichoke hearts, garlic salt
1. Preheat oven to 425 degrees. Line a baking sheet with a baking mat or parchment paper.
2. Spread a light layer of pizza sauce over each crust. Then, drizzle cashew cheese over each. Add on any additional desired toppings such as olives, mushrooms, and artichoke hearts.
3. Bake for 8-10 minutes or until the crust is golden around the edges. Remove from oven and let sit for 5 minutes.
4. If desired, add a few dollops of vegan cheese to the pizza. Then garnish with basil and enjoy your delicious pizza!
