Vegan Gluten-Free Tempeh Taco Salad

Back in high school, my mom and I always had weeknight dinner together. She would always make something incredible even if it was a busy work day for her! One of my favorite meals she would make was taco salad. She would make it with vegetarian “meat”, crushed tortilla chips and a creamy thousand island dressing. It was so hearty and filling yet easy to make, which made it the perfect weeknight dinner!

To veganize this and make it gluten-free, I’ve swapped out the meatless grounds for tempeh taco meat from my friend Claire’s blog! Then I made a chipotle mayo dressing which adds a little kick to the salad. Lately, I’ve been really obsessed with chipotle mayo, putting it on nachos, tacos and with fries! So feel free to double the dressing and repurpose it for your other Mexican-inspired vegan dishes!

Vegan Gluten-Free Tempeh Taco Salad

Vegan Tempeh Taco Salad Recipe

Serves 2

Ingredients

For the tempeh:

3 oz tempeh, crumbled

4 tablespoons tamari

1 tablespoon olive oil

1 tsp cumin

1 tsp coriander

1/4 tsp chili powder

For the salad:

Romaine lettuce, chopped

Tortilla chips, crushed

Sliced green olives

Pico de gallo

For the dressing:

1/4 cup Vegenaise (I used soy-free)

1 tablespoon filtered water

1 tsp chili powder

1/8 tsp chipotle powder

1/4 tsp sea salt

1/4 tsp cumin

Directions

1. Whisk together the tamari, olive oil, and spices. Add crumbled tempeh and mix. COver and let marinate for 1-4 hours. (If you’re short on time, you can marinate for less time.)

2. Heat 1 tablespoon olive oil over medium-high heat. Add the tempeh and cook until browned and crispy, about 12 minutes.

3. Mix together the dressing ingredients and set aside. Toss together salad ingredients in a bowl and then add the dressing and tempeh crumbles. Garnish with crushed tortilla chips and serve.
