Valentine’s Day is my favorite holiday so I couldn’t resist coming up with a festive treat for the holiday. I love Valentine’s Day because it reminds us to focus on love. My favorite part of February is planning how Thomas and I will spend the day. We don’t exchange gifts on Valentine’s Day and instead, love to take an adventure, go out of town, to a fancy dinner, watch a romantic movie, etc. As long as we are together, we are happy We do exchange cards though of course but I opt for shopping on Etsy where you can support a small business owner instead of a giant corporation like Hallmark. Plus they have the cutest niche cards, you’ll likely find one referencing your favorite show together or movie! Even if you aren’t in a relationship, take the time to focus on your friendships and family. Go see a movie with a friend, celebrate Galentine’s Day, or go on a lunch date with your mom! The possibilities are endless to make the day special
Anyways, onto the recipe! I whipped up these pretty pink parfaits with Daiya’s new vegan Greek yogurts! I can’t believe how far vegan products have come, it seems as though there is nothing that can’t be made vegan these days. I love that these are Greek style so they are a bit less sweet and therefore lower in sugar. I used the strawberry flavor which was delicious but feel free to swap it with their other flavors including blueberry, black cherry, or peach!
Strawberry Granola Parfait Recipe (Vegan and Gluten-Free)
2 containers Daiya Greek yogurt (or other non-dairy yogurt)
1 cup gluten-free rolled oats
1 tablespoon coconut oil
2 tablespoons pure maple syrup
1/4 cup coconut chips
1/4 tsp cinnamon
1/4 cup strawberries, chopped
1/4 cup raspberries
Optional: Mint for garnish
1. Heat a large skillet over medium heat. Add oats and toast for 3-4 minutes, until lightly golden. Add coconut oil and toast for an additional 3 minutes.
2. Add maple syrup, cinnamon, and coconut shreds. Turn heat down and stir over low heat for 5 minutes. Remove from heat and let cool.
3. Add half of the yogurt into each parfait jar. Then sprinkle with granola and berries. Add remaining yogurt and top with granola, berries, and mint, if using. Serve immediately and enjoy!
