A big bowl of mac and cheese is what dreams are made of. This vegan mac and cheese will deliver warm and cozy vibes instantly.
A couple of weeks ago, we got a Blendtec high-speed blender which has totally been life changing. Prior to the upgrade, we used a Ninja blender which we really loved and got great use out of for 3 years. It made incredible smoothies that were really thick and made great banana “ice cream”. But when it came to cashew cream, it struggled a bit but was still competent overall. But over the past few months, the wear and tear from daily use became evident as the cashew cream became undeniably gritty.
So when we were finally able to upgrade, we were so excited. While everyone raves about the Vitamix, I was interested in the Blendtec. My mom has a Vitamix which I have used and I loved the results but I didn’t love having to use the tamper stick. Usually, when I blend something, I like to leave it running while I cook or prep another ingredient. So the Blendtec ended up being a better fit for us and it luckily produces just as amazing of smoothies and sauces!
I developed this cheese sauce from a queso recipe and turned it into mac and cheese sauce with a few tweaks. It’s so creamy and delicious, I am obsessed! I also really love to put it on baked potatoes or just eat it by the spoonful
