Salads have never been my favorite food. Or even a food I’d make more than once a month. But lately, I’ve been craving more greens and a salad is the easiest way to enjoy them.
By loading a salad with tons of toppings it actually becomes quite enjoyable! I especially love salads with a creamy dressing and filling toppings. Black beans and corn are both rich in protein and fiber which keep you full and energized while avocado provides the perfect base for a creamy dressing.
I discovered my favorite pairing of the season is a bowl of pasta paired with a salad. I get my greens in while getting to enjoy one of my favorite foods. It’s a win-win!
