Vegan Gluten-Free Stuffing
In past years, I’ve used a gluten-free stuffing mix from a local bakery. But this year, I decided it was time to develop my own gluten-free stuffing recipe from scratch. I couldn’t believe what a difference it made! I served it to Thomas and a few friends who had tried the mix in past years, and they all preferred this version! Butternut Squash Crostini with Cashew Cheese and Thyme
This crostini recipe makes for a great Thanksgiving appetizer. Plus, all the toppings can be prepped in advance! Set these out for guests to enjoy while you finish serving up your plant-based feast. The recipe is on Organic Authority.

Vegan Thanksgiving Roast
Every Thanksgiving needs a meatless main and if you don’t have time to whip one up yourself, then a Tofurky or other vegan roast is a great option. Prior to going gluten-free, I always ate a Tofurky at Thanksgiving. Over on Organic Authority, I shared a bunch of vegan roasts for Thanksgiving.
