This fresh and healthy pasta dish is the perfect post-holiday meal. A light yet flavorful white wine sauce is complemented by tangy capers and sweet shallots.
This light and healthy pasta is one of my favorite dishes when I’m craving something nourishing yet tasty. I love holiday dishes such as stuffing, scalloped potatoes, and pumpkin pie but they get old quickly!
So once I’m ready to move on to less indulgent meals, I head to Sprouts Farmers Market to pick up fresh ingredients. Sprouts is my favorite place to shop because they have all of my pantry staples like cooking oils, spices, legumes, and pastas plus a wide array of vibrant organic produce for affordable prices.
For this dish, I knew capers would be the standout ingredient. Ever since I was young, I’ve loved the vinegary, salty flavor of capers. I always load up my salads and pastas with them. Having a jar on hand at all times is a must for me!
I decided a splash of white wine would complement the tangy capers so I reached for a bottle of Bonterra chardonnay. After gathering some fresh cherry tomatoes, shallots, parsley, and lemons I whipped up this tasty pasta in white wine sauce.
I love dishes like this for lunch, because who doesn’t crave pasta at lunch time sometimes? I have been known to have a bowl of vegan alfredo as early as 11 AM! But, of course not everyone can have a creamy dish like that early so this refreshing pasta is a great alternative.
Gluten-Free Fettuccine in Vegan White Wine Sauce with Capers
8 oz brown rice fettuccine noodles
3 tablespoons Sprouts Brand extra virgin olive oil, plus extra for drizzling
1 shallot, finely chopped
2 garlic cloves, minced
1/2 cup white wine
2 tablespoons Sprouts Brand capers
1/2 cup cherry tomatoes, halved
1/2 teaspoon sea salt
1/2 lemon, juiced
2 tablespoons parsley, minced
Bring a large pot of water to boil. Add fettuccine and cook according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium-low heat. Add shallot and saute for 3-4 minutes, until translucent. Add garlic and saute for 1 more minute.
Add white wine, tomatoes, capers, and sea salt and raise heat to medium-high. Bring to a simmer and then reduce to medium. Cook for 10 minutes, until tomatoes have softened. Remove from heat and add lemon juice. Garnish with parsley and then season with sea salt and pepper. Serve immediately and enjoy!
